Trip sent me this recipe years ago. His Momma shared it. I just use evaporated milk for Mil-not.
Pineapple Cream Pie: 1 can (med size) crushed pineapple ( sweet) 1 cup of sugar 2 eggs ( seperate yokes and save whites for meringue) dash of salt 3 tbs flour Place sugar, flour. egg yokes, in heavy med size pan. mix well, add 1/2 cup of mil-not and mix well.
Now add can of pineapple, 1/2 cup of mil-not,1 cup of reg. milk, mix well.
Cook over low heat until thickened,add 1 tsp of vanilla, stir
make or buy pie crust, bake crust first. Beat egg whites with a little sugar and 1/2 tsp of vanilla and a dash of salt until stiff. Spread pudding mixture into pie crust, cover with meringue, bake until lite brown.
