PIZZA SAUCE
10 pounds tomatoes 4 clove garlic mashed 2 tsp rubbed oregano 1 tsp pepper 2 tsp basil 3 cups chopped onions 3 TBSP olive oil 1 TBSP salt 3 TBSP brown sugar ½ tsp red pepper
Peel the tomatoes and remove stems. Chop or run through food mill. Simmer the chopped onions and tomatoes for about 20 minutes along with the other ingredients in a large pot. Run the sauce through a food mill. Return to pot and simmer stirring frequently to avoid scorching and cook down until half the volume. Add 1 tsp lemon juice to each pint jar Pour hot into hot pint jars leaving ¼ inch headroom. Wipe the rims of the jars clean with a damp cloth. Place hot previously boiled lids on the jars and screw down. Process pints 35 minutes in boiling water bath. 3 pints of pizza sauce.
