PICKLED OKRA
4 pounds okra 7 cups white vinegar 1/3 cup plus 1 TBSP salt 5 large garlic cloves, cut in half 5 small red peppers cut in half
2 ½ tsp dill weed 1 TBSP celery seed divided 2 TBSP mustard seed divided
5 clean pint jars ready Wash okra and trim off the stems being careful not to cut into pods Place 2 garlic cloves halves and 2 red peppers halves in each jar. Pack okra into jars leaving ¼ inch headspace. If using dill place one dill into each jar. Bring to a boil the vinegar, salt and spices. Pour hot mixture into jars leaving ¼ inch headspace. Process boiling water bath for 15 minutes. Needs a little shelf time to be good
