TOMATO PASTE
4 dozen large tomatoes 2 tsp salt
Peel, core and chop tomatoes. Measure --you should have about 8 quarts. Add salt. Place in large pot and simmer over low heat for about 1 hour. Stir often to prevent sticking. Remove from heat and press through sieve or through food mill.. Return to a kettle and cook slowly until paste hold it’s shape on a spoon--about 2 hours. Stir occasionally
Spoon into clean hot jars, leaving ½ inch headspace. Seal process water bath for 30 minutes
Makes 8 pints

I want to do this really bad just for practice.... I know this sounds stupid BUT...I could go to grocery store and buy some tomatos and try it right?

Sure you go buy them and make this. I made spaghetti sauce last year from the Roma's I grew. It is good. Using anything other than Roma's takes me about 3-4 hours to cook it down enough. I do cook it slow tho. Good luck and let us know how it comes out. Sidecar

I can not wait to get tomatoes in the ground. I am so ready for fresh tomatoes. And this year I am canning tomatoes even if I have to buy them all from the farmers market. I refuse to keep paying 1 for canned tomatoes that is about one tomato packed in tomato juice.
