SPAGHETTI SAUCE
10 pounds tomatoes 3 TBSP oil 4 ½ cup onions chopped 3 garlic cloves minced 1 ½ tsp oregano crushed 2 bay leaves crushed 1 TBSP plain salt 1 TBSP sugar 1 tsp pepper ½ tsp red pepper crushed 1 TBSP dried parsley 1 TBSP celery leaves minced
Peel, core, and chop tomatoes. Combine with remaining ingredients in large pan. Simmer 2 hours until desired consistency. pour into hot jars to ½ inch from top. Wipe jar top threads carefully with damp cloths. Put on lids and bands. Place in water bath canner with at least 2 inches of hot water over top of jars. Bring canner to a gentle boil and process 30 minutes. Remove jars to cool
