SPICED TOMATO SOUP
4 quarts chopped peeled cored tomatoes 3 ½ cup chopped onion 2 ½ cup chopped celery 2 cups chopped sweet red peppers 1 cup sliced carrots 7 bay leaves 1 TBSP whole cloves 1 clove garlic 1 cup brown sugar 2 tsp salt
Combine tomatoes, onions, celery, peppers, carrots, bay leaves, cloves and garlic in large pot. Simmer until vegetables are tender. Puree in a food mill. Return puree to pot. Add sugar and salt. Cover over medium heat 15 minutes. Ladle into jars leaving 1 inch headspace. Process pints 20 minutes at 10 pounds
