When you were in Memphis at the Rendezvous, did you check out Corky's. I sorta lived in Memphis for 1.5 years and thought it was better. Plus they have a drive thru

You're gonna have to learn these things if you plan on making it in Texas, BTW - Although those silly Texicans insist on making BBQ out of "shudder" BEEF?!?!

Uh, excuuuuuuse me but the best bbq is now here in southern middle TN. I have 3 special recipes for sauce (one of which involves 3 kinds of rum), 2 for rubs and 1 secret marinade for brisket. I sneaked in mesquite wood when I moved from Texas to Tennessee. I'm learning the secrets of hickory and tulip poplar wood. And I have the best recipe for King Ranch chicken on earth (its straight from the ranch its ownself). And we'll not mention my 'fat chocolate cake' thank you very much. WHOA!!! Louis!?!?!?! 'shudder' BEEF? Shudder?

Best BBQ I EVER had was in Burns, Tennessee. Huge BBQ smoker had 2 whole hogs hanging and smoking for days. You could cut that meat with a plastic spoon and I haven't tasted anything like it since
Now I'm WAY north of the line, but I'll always fly my Stars and Bars and my hero is still James Longstreet. I ain't moving south away from the snow, but you can consider me a collaborator.
