Method 1 1. place picked over beans in a large pot, and add 2 cups water for every cup of beans 2. place pot in fridge soak for 4 to 8 hours
3.drain beans
Method 2
If you suffer from gas when you eat beans try this 1. Place rinsed beans in a large pot with 3 cups water per 1 cup beans. Bring to a boil, and boil for 2 min. Drain beans.
2.Add fresh water use 3 cups water to 1 cup beans again. Soak for 6 or more hours
3.drain beans
Method 3 Quick soak
1.cover beans with water and bring to a boil 2.remove from heat let stand at room temp for 1 hr
Fast bean cookery
1. Soak beans according to method 1 2. drain 3.place in freezer bags 4.freeze in portion sizes that you want(2-4 cups per container is usually useful)
When the beans freeze, the water that they absorbed while soaking expands and breaks down the cellulose in the beans. After defrosting they will cook up on top of the stove in 20min or so.

I use method #3 and it works every time. Good thing cause I can never seem to plan very far ahead when it comes to cooking.
