Potato Recipes
Baked Potatoes: Poke clean potatoes with a fork; rub with butter. Bake at 400* for an hour.
Boiled Potatoes: Peel and cube potatoes. Boil a big pot of water with a teaspoon of salt. Add potatoes. Cook for 20 to 30 minutes or until tender. Drain. Add butter and season.
Mashed Potatoes: Prepare Boiled Potatoes . After drying them; mash. Add butter and milk. Mash until smooth. Season.
Hash Browns: Wash potatoes. Shred on a coarse cheese shredder or in a food processor. Heat a skillet on medium high heat with 2 to 3 tablespoons of oil. When hot, add potatoes and pat down so they cover the pan evenly. Fry without lid for ten minutes on each side. Carefully pry the browned bottom up and flip the potatoes over in large chunks. Add more fat needed. Fry again for another 8 to 10 minutes and serve with catsup.
French Fries: Peel potatoes and cut. Soak in a bowl of cool water for at least 20 minutes. Must be done to crisp fries. Drop the potatoes into the hot fat (about 370*, covering completely. Cook for 10 to 15 minutes. Drain. Salt and serve.
Oven Fries: Peel potatoes and cut. Put into a plastic bag with oil, about a tablespoon per potato. Shake, coating liberally. Bake on cookie sheet at 450° for 10 to 20 minutes. Salt.
Fried Potatoes: Cut into slices about 1/4-inch thick. Heat fat in a skillet. Add the potatoes, arranging in layers if needed. Cover the pan. Cook for 15 to 20 minutes. Turn to brown the other side. Add more fat if needed. Season with salt and pepper; serve hot.
Scalloped Potatoes: Peel and slice 6 to 8 potatoes. Combine 1/3 cup of flour, 1 teaspoon salt and 1/4 teaspoon pepper. Arrange a layer of potatoes in a well oiled casserole. Sprinkle with seasoned flour. Repeat until you run out of ingredients. Pour milk into the dish to the top of the potatoes. Dot with butter and bake at 350° for 45 minutes to an hour. Allow to sit for a few minutes before serving.
